In addition to typical food vendors, Newtown Earth Day features a unique collaboration with the Newtown High School Culinary Department. Focusing on Food Sustainability and the elimination of food waste, this project endeavors to be both educational and delicious! Inspired by some amazing research and initiatives, we will be offering a menu of 21st century foods, packaging and beverages. Did you know food waste is the single largest component of solid waste sent to incinerators and landfills? The Connecticut DEEP is actively supporting programs throughout the state to address this issue.
Did you know 75 percent of the food we consume comes from just 12 plant sources and five animal sources. And just three crops — wheat, corn and rice — make up nearly 60 percent of the plant-based calories in most diets? A fascinating new study promotes a whole new approach to our diets, food industry and the effects on our fragile planet.
Lori “Lola” Hoagland is the head of the Newtown High School Culinary Department and deeply committed to exploring sustainability in the food service industry.
